Ingredients:

  • 1 whole duck (about 5-6 pounds)
  • 1 tablespoon of Chinese five-spice powder
  • 1 teaspoon of salt
  • 2 tablespoons of honey
  • 2 tablespoons of soy sauce
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of hoisin sauce
  • 1 teaspoon of sesame oil
  • 1 orange, quartered
  • 4 cloves of garlic, crushed
  • 2-3 slices of ginger
  • 6 green onions, cut into 2-inch pieces
  • Pancakes, hoisin sauce, and sliced cucumber for serving

Instructions:

  1. Preheat your oven to 350°F.
  2. In a small bowl, combine the Chinese five-spice powder and salt. Rub the mixture all over the duck, both inside and out.
  3. In a saucepan, heat the honey, soy sauce, rice vinegar, hoisin sauce, and sesame oil over low heat until combined. Set aside.
  4. Stuff the cavity of the duck with the orange, garlic, ginger, and green onions.
  5. Place the duck on a rack in a roasting pan and roast in the oven for 2 hours, basting with the honey-soy sauce mixture every 30 minutes.
  6. Increase the oven temperature to 400°F and roast for an additional 30 minutes to crisp up the skin.
  7. Remove the duck from the oven and let it rest for 15 minutes before carving.
  8. Serve the Peking duck with pancakes, hoisin sauce, and sliced cucumber.
