  2. In a small bowl, mix together the honey, soy sauce, hoisin sauce, Chinese five-spice powder, salt, pepper, rice vinegar, garlic, and ginger. Rub this mixture all over the duck, making sure to get it into the nooks and crannies created by the scoring.
  3. Place the duck on a rack set over a roasting pan and let it marinate in the refrigerator for at least 24 hours, turning it occasionally to ensure even coating.
  4. Preheat your oven to 350°F (180°C). Remove the duck from the refrigerator and let it come to room temperature while the oven heats up.
