How to Season a New Wok

If you have recently purchased a new wok, you may be wondering how to properly season it to ensure it lasts you a lifetime. Seasoning a wok is an important step to protect it from rust and create a non-stick surface for cooking. Follow these simple steps to season your new wok and get it ready for all your delicious stir-fries and other recipes!

Step 1: Wash Your Wok

Before you begin the seasoning process, make sure to wash your new wok with warm, soapy water to remove any manufacturer’s coating or residues. Use a sponge or soft cloth to scrub the wok inside and out, then rinse it thoroughly with water and dry it completely.

Step 2: Heat the Wok

Next, place your clean wok on the stove over medium-high heat. Allow the wok to heat up until it is hot to the touch. This will open up the pores of the metal and prepare it for seasoning.

Step 3: Add Oil

Once the wok is hot, add a high smoke-point oil such as vegetable oil, canola oil, or grapeseed oil. Using a paper towel or a brush, spread a thin layer of oil around the inside of the wok. Make sure to coat the bottom and sides evenly.

Step 4: Heat and Cool

Turn the heat to high and let the oil heat up until it starts to smoke. This will create a bond between the oil and the metal, seasoning the wok. Once you see smoke, turn off the heat and let the wok cool down completely.

Step 5: Wipe and Repeat

After the wok has cooled, use a paper towel to wipe out any excess oil. Repeat steps 3 and 4 at least 2-3 more times to build up a good seasoning layer. The more you season your wok, the better it will perform.

Step 6: Store Properly

Once you have seasoned your wok to your satisfaction, make sure to store it properly. Avoid using harsh detergents or abrasive sponges when cleaning your wok, as this can strip away the seasoning. Instead, rinse with hot water and use a soft cloth to clean.

With proper care and maintenance, your seasoned wok will develop a beautiful patina over time and become increasingly non-stick. Enjoy cooking up your favorite Asian-inspired dishes in your perfectly seasoned wok!
