How to Season a Wok

If you’re a fan of stir-frying or Asian cooking, having a well-seasoned wok is essential. Seasoning a wok not only prevents it from rusting but also creates a natural non-stick surface for cooking. Follow these steps to season your wok and elevate your stir-fry game!

1. Choose the Right Wok

Whether you prefer a traditional round-bottom wok or a flat-bottom wok, make sure your wok is made of carbon steel, cast iron, or stainless steel. Avoid using non-stick coated woks as they cannot withstand high heat to properly season.

2. Wash and Dry Your Wok

Before seasoning your wok, wash it with warm soapy water to remove any factory residue or dirt. Use a scrubbing pad or brush to gently scrub the wok inside and out. Rinse thoroughly and dry it completely using a towel.

3. Heat the Wok

Place your wok on the stove over medium-high heat. Heat the wok until it is hot and starts to smoke. This initial heating will open the pores of the metal, allowing the oil to penetrate and create a non-stick surface.

4. Apply Oil

Turn off the heat and let the wok cool slightly. Use tongs to grab a paper towel and dip it in oil (vegetable oil, canola oil, or flaxseed oil work well). Rub the oil all over the wok, including the inside and outside, using the paper towel.

5. Heat and Cool

Turn the heat back on to medium-high and heat the oiled wok until it starts to smoke. Let it smoke for a few minutes, then turn off the heat. Allow the wok to cool completely before repeating the oiling and heating process 2-3 more times.

6. Clean and Maintain

After seasoning your wok, avoid using soap or metal utensils that may damage the seasoning. Instead, wash your wok with hot water and a soft sponge. Dry it thoroughly and rub a thin layer of oil to maintain the seasoning.
